Molokhiya is a deliciously warm and flavourful dish. Made from finely chopped molokhiya leaves, this green stew is a favorite across Egypt.
It has a unique texture (kind of like okra) and is known for its bold garlic and coriander flavor. Whether you're eating it over rice or scooping it up with bread, molokhiya is a deeply satisfying comfort food that’s as nourishing as it is delicious.

With a pestle, grind the garlic until it forms a paste. Set aside half of it for later.
Add the coriander to the half of the paste of garlic and grind together.
In a pan, combine the butter and ground coriander/garlic paste on high heat.
Once the butter starts melting into the mixture, stir until the colour turns golden.
Make some rice and set aside.
Ground onions in vinegar. A few spoonfuls into your final dish should do.
Roasted chicken, pulled.
Crispy arabic pita bread. You can throw it in the oven until it turns golden brown.
Heat the chicken stock in a pot until it simmers lightly.
Add the garlic (set aside earlier) and the frozen molokhia.
Once the molokhia has reached a near-boiling temperature, add the taqliya mixture and the salt and stir to ensure it is evenly distributed.
Remove from heat.
You can serve the molokhiya on a bed of rice, with a few spoonfuls of the vinegar/onion mixture. Add some chicken and pita bread on top as desired.
Enjoy!
